Neat - Mexican Mix - A Healthy Replacement for Meat:
Neat Mexican Mix is a healthy alternative to meat made of tree nuts, beans, and grains.
Use in place of ground beef in nachos, tacos, burritos, enchiladas, and much more. Neat mix is vegetarian, soy free and gluten free.
Combine 1 package of this dry mix with water and two eggs, mix well, then use like ground beef in your favorite Mexican recipes.
Each 5.5 oz. package makes 4 servings of nut-based, Mexican-seasoned meat.
*This neat mix contains all vegan ingredients but requires the addition of eggs. Neat can be made vegan by combining with one of our great egg replacements such as the Neat Vegan Egg Substitute.
neat MINI QUICHES 12 - 14 minutes
Ingredients: neat Mexican Mix Pack (prepared normally) 3 eggs (or substitute) 2 TBSP Milk 1 can diced tomatoes & chilis 1 pack mini phyllo cups 1/2 cup shredded cheddar cheese
Directions: 1) Cook the neat according to package instructions. 2) Make a filling by combining the cooked neat with all ingredients except the cheese. 3) Fill mini phyllo cups with the mixture and top with shredded cheese. 4) Bake at 350 for 12 - 14 minutes. Serve as an appetizer at a dinner party & enjoy with friends!
LAURA'S neat VEGAN CHILI 12 - 14 minutes
Ingredients: 2 neat Mexican Mix Packs (prepared normally) 2 garlic cloves, minced 2 TBSP oil 1 TSP onion powder 29 oz. can tomato sauce 29 oz. can kidney beans 29 oz. can pinto beans 29 oz. can diced tomatoes 3 TBSP chili powder 1 TSP garlic powder 1 TSP black pepper 2 TSP Salt 1/2 TSP cayenne 1 - 2 fresh diced chili peppers
Directions: 1) Prepare the neat according to package directions & set aside. 2) In a separate large stock pot, saute the garlic in oil for 2-3 min. 3) Add all the remaining ingredients except the neat to the pot. 4) Simmer for at least 30 min, adding 1-2 cups of water as it cooks. 5) Add the cooked neat Mexican just before serving. Refrigerate or freeze leftovers. Makes enough to serve a crowd!
