During my pre-vegetarian childhood, tuna salad and tuna casserole were two of my favorite foods. After becoming vegetarian 30 years ago, I rarely missed meat, but often missed fish.

As an ingredient in tuna salad or casserole, Caroline's is very similar to natural tuna (except that it lacks large chunks), and therefore works well. However, if served plain, I don't think it would fool the average feline. . .or me.


2 small cans Caroline's Fishless tuna
1 medium/large carrot, grated
1 small can sliced black olives
1/2 cup dried tomatoes, diced
3-4 sliced scallions, including green tops
4-6 sprigs fresh parsley, finely chopped
1 tsp freeze-dried dill
Freshly-ground black pepper and/or lemon pepper to taste
3-4 large spoonfuls vegan or real mayonaise

Mix all ingredients and refrigerate at least 2 hours to blend flavors. Serving suggestions:
1. On salad spinach
2. On onion hamburger-style buns
3. On savory or pumpernickel bagels

This is the closest vegetarian tuna I can find.  It's not tuna, keep in mind, but is pretty darn tasty as a great replacement.  It's worth a try!

Before I gave up meat, tuna sandwiches were a staple of my diet. This stiff is very good. It satisfies that itch perfectly.

Very tasty and reasonably priced compared to a similar product carried by Sprouts. Goes very well tucked inside a bagel with some fresh spinach leaves.
