The Vegg vegan egg baking mix is a powdered mix. For 1 egg, beat 1 tsp. mix with 1/2 tsp. sugar and 1/4 cup water. Each 4.2 oz. package replaces about 34 large eggs.
The Vegg Quick Spinach Quiche

The Vegg Vegan Quiche Recipe:
- Preheat oven to 350 degrees
- Thaw a frozen pie crust
- Beat together 4 tsp. of Vegg Baking Mix with 1 cup almond milk
- Mix in 2 Tbsp melted margarine, 1 cup flour, 1/2 cup finely chopped onions, 1/2 cup "bacon bits", 1 cup thawed cooked frozen spinach (squeeze out excess water from veggies)
- Add salt and pepper to taste
- Mix well, then spread into the pie crust
- Grate cheddar cheese substitute on top
- Bake for 45 minutes
Vanilla Cake

The Vegg Vegan Vanilla Cake Recipe:
- Preheat oven to 350 degrees
- With an electric mixer, beat together 4 tsp. of Vegg Baking Mix with 1 cup water and 2 1/4 cups super fine sugar for 1 minute
- Add 2 1/2 cups flour, 1 cup almond milk, 3/4 cup oil, 2 tsp double-acting baking powder, and 2 tsp vanilla
- Beat for 2 more minutes
- Pour into two 9" parchment-papered pans
- Bake for 45 minutes
Basic Cookie Dough Contributed by: The Vegg
The Vegg Basic Cookie Dough Ingredients: - 2 tsp. Vegg Baking Mix combined with 1 tsp. sugar and whisked with 1/2 cup cold water (let sit while gathering other ingredients)
- 3/4 cup margarine (room temperature)
- 2-1/4 cups flour (gluten-free should work fine)
- 1/4 tsp. Kosher salt
- 1 tsp. baking soda
- 3/4 cup white sugar
- 3/4 cup packed brown sugar
- 1 tsp. your favorite flavoring extract
Instructions: - Step 1 - Preheat oven to 350 degrees Fahrenheit. Line baking trays with parchment paper.
- Step 2 - Combine flour, baking soda and kosher salt.
- Step 3 - Cream sugar/brown sugar with margarine until well combined (1-2min).
- Step 4 - Add Veggs and extract sugar mixture. Beat (1 min). Add flour mixture and beat (about 1-2 min).
- Step 5 - Form into ping pong ball sized balls by rolling between palms of hands and space about 2 inches apart.
- Step 6 - Bake 12-15 min on middle shelf of oven. When done, place baking sheet on wire rack and let cookies cool 5 min.
Makes about 36 cookies.
